Lieven van Aken

From Antwerp, Belgium, Lieven has worked with renown-starred chefs such as the Belgian Lionel Rigolet and Michel Guerard.

Lieven van Aken is a chef who questions harmony, invents food pairing, honors the product…to leave a trace of an astounding and generous dish. Entirely impregnated with Provence, its roots always slip into the interstices of his feasts.

Respect for the living

Between the starred table perfectly set and the rows of the permaculture garden, there are a few steps. The organic vegetables of the Manville farm thus come to compose the signature dishes of the organic menu of l'Aupiho. Lieven and his team harmonize with nature and local farmers who share the same life values.

From the fish market of Grau du Roi to the pig of the Mont Ventoux by way of the gluten-free breads of  Kom&sal of Nadia Sammut… It is all the will and spirit of a green gastronomy that expresses itself from the land to the plate … to produce the most simple, rare, suited and marvelous…
